Spicy Slow Cooker Chilli (Gluten and Dairy Free)

So there are days when the crockpot is an absolute life saver! I love mine, if you’ve a busy Mum, kids have after school activities yet need a meal when you come in, working all day, have a busy day but would like to come home to a hot meal the crockpot is your friend! Whole joints of meat to soup and stews it’s a wonderful machine.

So today I made a spicy chilli but of course you can make this milder if you wish.

You will need to feed a family of 4:

500g of steak mince

1 pack of chopped chorizo

1 large red onion

1 stick of celery chopped fine

2 garlic cloves chopped or crushed

1 tin of red kidney beans, rinsed

1 tin of chopped tomatoes

2 tsp of cumin seeds

2 tsp coriander powder

1 or 2 tsp chilli powder or to taste

2 tsp dried oregano

1 tsp mixed herbs

1 beef knorr stock melt (or similar) ensure gluten free)

3 carrots peeled and chopped

2 red peppers deseeded and chopped

Method

The method couldn’t be easier. Throw everything in the crockpot and stir round and pop the lids on. If you are out all day leave on low, I would also add 300ml of water if you are not going to be able to check on it at any point, as the last thing you want is to come back to a really dried out dinner. If it’s going to 3/4/5 hours I would put it on high. Every crockpot has different settings so go with what your used to here.

If you are not in a rush in the morning to get out the house (lucky you) Then I would brown off my meat and onions first before putting in the crockpot. This gives you extra flavour and seals the meat but to be honest I rarely have time! And I think you can totally get away with it with this dish.
