Slow Cooker Lamb Tagine (Gluten Free and Dairy Free)

This makes the house smell amazing while its cooking as well as being absolutely delicious when eating it.  Its so comforting and warming.

If you are really organised you can choose to marinate the meat overnight before cooking to intensify the flavours.  If you do not have time you can still mix it all together and cook straight away.  If you want cook this dish in advance too this dish just improves and eat a day or two later or your find left overs taste even better!Lamb Tagine

So you will need:

For the marinade:

1 tbsp of tomato puree

1 tbsp honey

1 tbsp lemon juice

1 garlic clove crushed

1 tsp of ginger

1 tsp ground cumin

1 tsp corrainder

1 tsp tsp paprika

1 tsp cayenne pepper

For the Tagine:

600g of Lamb Stewing Steak

1 small onion chopped

2 red peppers, deseeded and chopped

100g of dried and ready to eat apricots chopped into chunks

400g tin og chickpeas drained

450ml of hot lamb stock

400g chopped tomatoes

 

Method:

  1.  In a small bowl, mix together the marinade ingredients to firm a paste and mix through the meat so that it is coated.  If you are able to marinade the meat overnight cover and store in the refrigerator.  If you are cooking straight away put into the slow cooker bowl.
  2. Chop the onions and peppers and put into the pot along with the apricots and chickpeas and canned tomatoes.  Pour over the hot stock and place on the lid.
  3. Cook on low for 8-10 hours on low and before serving check for seasoning and add salt and pepper if necessary.
  4. Serve with cous cous (if not gluten free) or rice or maybe flat breads (see my recipe) or even potatoes.img_4102
