Italian Pasta Salad

This Pasta Salad is great for gatherings, BBQs and buffets or just to take to work for lunches or to have as a side dish with meats and fish for dinners.  If you are making this gluten free – use gluten free pasta but if not use regular pasta.

You will need:

For the dressing:

1 tsp dried basil

1 tsp dried oregano

1/4 tsp paprika

1tsp garlic powder

1/4 cup of white white vinegar

2 tsp lemon juice

1/2 cup of olive oil

2 tsp minced dried onion

2 tbsp Parmesan cheese grated

1 tsp honey

For the Salad:

12oz Pasta cooked (use gluten free pasta if making this gluten free)

1/2 cup of black olives

1/2 cup of pepperoni chopped

1/2 cup of broccoli chopped

1/2 cup of green pepper chopped

1/2 cup of red pepper chopped

1/2 cup of mozzarella chopped

1/2 cup of Parmesan cheese grated

Method:

  1. Cook the pasta in salted water as normal instructions and drain when cooked and allow to cool.
  2. Take the ingredients for the dressing and place then in a small bowl and whisk together and place to one side.
  3. Take the vegetable ingredients for the salad and chop them and place in a large bowl along with the mozzarella and Parmesan cheese.  Mix in the cooled pasta and pour over the dressing and stir well taking car not to break up the pasta.  Taste and season where needed.
  4. Store in the fridge until needed and serve at room temperature ideally.
  5. Enjoy!img_2382
