So I’m in full swing of my elimination diet and I’m always on the look out for ways to get flavour and taste into my diet. When we have eliminated so many ingredients out of my diet it can be tricky. Vegan cheese is out as we have eliminated coconut and soya, and also cashew nuts too, and I love pesto so back to the drawing board and I’m making my own.
This is surprising easy and I got it right first time. I used my nutribullet for this job but a food processor would also work or if you have neither of this a passel and mortar would work it would just give you a thicker consistency and bigger muscles!
So I used 2 bunches of fresh basil
Juice of 1 lemon
3 garlic cloves
1 good pinch of sea salt
1 good gulg of olive oil
3 tbsp of pine nuts
Then blitzed them together and taste and adjust where necessary to suit. I put mine into little freezer bags and froze into small portions ready to take out when needed to use on pasta, chicken, salad dressings, dips etc.
I didn’t miss the cheese one bit, however if unlike me you can eat cheese or eat vegan cheese feel free to add it in!
