Chopped Salad (Vegan, gluten and dairy free)

I love a chopped salad and you be really creative with it too and vary it to suit a meal, diet, cuisine, or just use up what you have!

I made this yummy chopped salad at the weekend for dinner ‘with the girls’. I served it with a number of other dishes and smoked salmon. It went down really well and the whole meal was delicious and fresh. Everyone loved it and said how delicious it was. The great thing it’s fantastic to make ahead and serve and any left overs are great for lunchboxes etc too. If you are not making it for gluten, vegan or dairy free, you can crumble feta or other cheese, croutons, make a creamy dressing etc.

So for this is used,

1/2 iceberg lettuce, finely chopped into small pieces

1 yellow pepper chopped into small pieces

1 large tomato chopped into small pieces

Hand full of yellow plum tomatoes chopped into small pieces

4 sun blushed tomatoes chopped into small pieces

Fresh mint and basil chopped into small pieces

Pomegranate seeds

Toasted pine nuts

1/2 red onion chopped into very small pieces

1/2 cucumber chopped into very small pieces

A couple of gerkins chopped into small pieces

As you can see you can use your imagination here and use all sorts of ingredients. Hope you enjoy 🥙
