This is such a gorgeous dish and bursting with freshness and flavour. It goes so well with many other dishes and great on its own as a lunch, as a buffet dish, with dinners, hot or cold, and picnics and lunch boxes.
So for this recipe
I used 1 cup of quinoa
2 cups of vegetable stock
2 cups of frozen peas cooked
Handful of fresh mint chopped finely or to taste
A squeeze of lemon juice
Salt and pepper
I love to cook my quinoa in the oven as it comes out perfect and fluffy every time. Add 1 cup of quinoa to 2 cups of vegetable stock or water. Cover and cook at 190’c for 20 minutes or until water is absorbed and then fluff with a fork.
Add the cooked peas, and chopped mint and season with lemon juice and salt and pepper. Great served hot or cold but my preference would be cold with other delicious salads. Enjoy 😉
