Quinoa with Pea and Mint

This is such a gorgeous dish and bursting with freshness and flavour. It goes so well with many other dishes and great on its own as a lunch, as a buffet dish, with dinners, hot or cold, and picnics and lunch boxes.  I love to cook my quinoa in the oven as it comes and fluffy and light every time, plus there is only one pan to wash up!

I love to cook my quinoa in the oven as it comes out perfect and fluffy every time. The other big bonus is this dish only takes one pan! We all need less washing up sometimes! I love this recipe served hot or cold and its lovely in the summer for salads and buffets and stores well in the fridge for a couple of days.

Equipment

  • oven proof dish

Ingredients

  • I used 1 cup of quinoa
  • 2 cups of vegetable stock
  • 2 cups of frozen peas cooked
  • Handful of fresh mint chopped finely or to taste
  • A squeeze of lemon juice
  • Salt and pepper

Instructions

  • heat the oven to 180' c
  • pour the quiona into an oven dish (multiply what you need by the number of people you are cooking for)
  • luff with a fork.
    Add the cooked peas, and chopped mint and season with lemon juice and salt and pepper.
  • Pour over the hot stock and place in the oven (ive also een known to add pesto at this stage to) You can choose to cover the dish with foil or leave it uncovered if you wish. I like to leave uncovered and then you get some crispy buts of quinoa which gives some crunchy and varied texture. Cook for 20 minutes.
  • remove from the oven and the liquid should be absorbed and fluff with a fork.
    Add the cooked peas, and chopped mint and season with lemon juice and salt and pepper.
