Equipment

  • pestle and mortar or nutribullet or food processor
  • Chopping Board
  • knife

Ingredients

  • 6 green chilli's i take the seeds out but depends on how hot you like it
  • 2 shallots peeled and chopped
  • 1 large thumb sized piece of ginger peeled and roughly chopped
  • 4 cloves of garlic
  • 1 bunch of coriander including the stalks
  • 2 lemon grass sticks cut into chunks
  • 1 lime squeezed and zest
  • 10 lime leaves
  • 1 tbsp coriander seeds
  • 1 tsp ground cumin
  • 1 tsp black peppercorns
  • 2 tbsp olive oil
  • 2 tbsp fish sauce

Instructions

  • take all the ingredients and place in a processor or nutri bullet and blitz until smooth or pound in a pestle and mortar
  • you can put this in batches and store in the freezer until needed for 3 months
