Roasted Cauliflower and Almond Soup

This is a really lovely soup with a big bold flavour. With this recipe a lot of the work is done in the oven roasting the cauliflower and spices which gives a lovely flavour paired with the roasted almonds. This soup is naturally gluten and dairy free and suitable for vegans.

Equipment

  • stick blender or blender
  • Chopping Board
  • knife
  • small pan

Ingredients

  • 2 tbsp oil
  • 2 onions chopped
  • 1 cauliflower chopped into florets
  • 4 garlic cloves
  • 500 ml vegetable stock
  • 2 tsp cumin seeds
  • 2 tsp curry powder
  • 1 tsp turmeric
  • 100 g blanched almonds
  • 200 ml almond milk
  • 1 stick celery chopped into big pieces

Instructions

  • Pre heat the oven to 180'c
  • in a large bowl mix together the dry spices with the oil and stir to combine
  • add the cauliflower, garlic cloves in their skins, onion and celery to the bowl and stir through the mixture to coat the vegetables
  • tip this into a roasting tray and place in the centre of the oven for 50 minutes or until cooked through.
  • in a dry pan roast of the almonds and set to one side
  • Once cooked remove the garlic from the tray and pop the garlic from their skins. Place the roasted ingredients into a large pan with the almonds and add the hot vegetable stock and blend with a stick blender until smooth. Add the almond milk and stir through
  • you may wish to garnish this soup with coriander, seeds, chilli or spring onion
